last night was one my favorite nights of the entire semester.

me and my favorite co-chef, francisco made some delicious dishes and this one was one that i’ve been wanting to make ever since i saw it on smitten kitchen

ratatouille’s ratatouille
served on top of a bed of wheat berries and topped with soft goat cheese. paired with a glass of shiraz.  

eggplant
zucchini
yellow squash
red pepper
onions - white and red (diced, rough chop) 
diced tomatoes/tomato puree (canned)
garlic (minced)
thyme
salt and pepper 
olive oil

we decided the next time we make this, we may add more olive oil as well as doubling the amount of tomato puree.
