last night was one my favorite nights of the entire semester.
me and my favorite co-chef, francisco made some delicious dishes and this one was one that i’ve been wanting to make ever since i saw it on smitten kitchen.
served on top of a bed of wheat berries and topped with soft goat cheese. paired with a glass of shiraz.
onions - white and red (diced, rough chop)
diced tomatoes/tomato puree (canned)
salt and pepper
we decided the next time we make this, we may add more olive oil as well as doubling the amount of tomato puree.
