the bread that sounds almost vegan and then eggs and butter snuck in.
saturday night, my friend anna came in from out of town to stay at my place. we decided after a night on the town to do some baking. of course, my favorite co-chef, francisco, was around to help as well!
zucchini pumpkin bread
butter (melted and browned)
dried cranberries (on top)
the recipe that we found and used originally from “the little red house” called for flax seed as well, but since we didn’t have any, so we decided to just double the oats. i don’t know if i’d do that again..
this gave the bread quite a gooey center so if you prefer your breads less moist, you might want to try it with the flax seed.
